Easy Instant Pot Red Curry

This summer on Prime Day I was one of the many who scored an Instant Pot.  What is an Instant Pot you ask? Pretty much the best cooking invention since the Kitchenaid Mixer. Its a pressure cooker – BUT it has many other features: slow cooker, rice cooker, yogurt maker, steamer.  Now you may say – well I have a crock pot and a rice cooker and yes so do I- but the Instant Pot is different.  It cooks faster and I’d say better so now we have come up with an Easy Instant Pot Red Curry that is a favorite dish!

One of the recipes we love to make at home is a yummy Red Curry with chicken. In the past I would have to cook the chicken, then use separate ingredients and cook everything in stages. However, I recently discovered Trader Joe’s Thai Red Curry Sauce. This sauce combined with the Instant Pot to cook everything made delicious curry we couldn’t get enough of!

Start off by cutting up about 1 pound of chicken into cubes. I used fresh chicken here – but you can use frozen. Just run it under cold water for a few minutes and use a sharp knife and chop it up.

Dump the chicken in the Instant pot and cover with the entire jar of curry sauce! Then I put a little bit of water in the Jar to get the rest of the sauce out (1/4c-1/2c water).

If you care for cashews you can throw some in there as well – I added 1/2 cup.

Set the Instant Pot for High pressure – manual cook time of 5 mins for fresh chicken & 7 minutes for frozen. If you have chopped up the chicken these cook times should be good. If you didn’t, it will need longer.

Once the cook time is finished, toss a towel over the valve and do a quick release of the pressure. Once it has released you can open it up and make sure the chicken is cooked. Then I turned the instant pot to saute and added about 1/2 can of whole Coconut Milk and stirred it around. I let it saute for a few minutes to mix and set the flavors even more. If your chicken isn’t cooked all the way – it should finish cooking during this time. If you want your curry even more soup-ey you can add the whole can of coconut milk.

We ate ours on top of brown rice and topped with a few more cashews!

Easy Instant Pot Red Curry with chicken

Ingredients
  • 1 pound uncooked chicken breasts
  • 1 Jar Trader Joe's Thai Red Curry Sauce
  • ½c Cashews
  • 1 can whole coconut Milk
Instructions
  1. Cut up the chicken into approximately 1" cubes.
  2. Add chicken to the Instant Pot
  3. Pour jar of curry sauce on top. Use a little water (1/4-1/2c) to rinse out Jar & add to chicken.
  4. Top with cashews
  5. Set Instant pot to manual high pressure for 5 minutes for fresh chicken (7 min frozen)
  6. Perform quick release when finished.
  7. Add in ½ or whole can of coconut milk and turn to Saute.
  8. Saute for 3-5 minutes.
  9. Best served with brown rice and topped with more cashews.

This is a recipe that is going in our regular rotation!

Mommy and Me Monday | Toddler Foods Ep. 2

And Another week has gone and with it August! This past week was pretty typical around here. We hit up the gym every day and the kids had a BLAST in the bouncy house. We also went out to eat a couple times so I’m going to share a few pictures of our toddler foods when eating out methods! And there are some funny faces being made on a regular basis that are just too good not to share!

We went to our favorite taco store last week on Tuesday to celebrate Auntie’s birthday – Even though she isn’t here with us! Its her favorite place to eat at our house! I usually get nachos and so we have lots of chips – but the kids aren’t huge chips fans because they are so hard. The guy sat this place are super accommodating to toddler foods and so we order a plate of rice, a plate of beans, and some flour tortillas. They bring us plastic spoons and the kids ate almost all of the food! You can see their plates here and most of it was gone when we left! Serious win!

We also went to 5 guys burgers this week and the kids split a little hamburger. They both ate their half a burger plus a good bit of yummy fries! I realize it is peanut friendly so not great for everyone – but they definitely enjoyed it and Hannah asked for more after it was all gone!

We also get Jersey Mikes once a month – I get turkey on white bread and they both eat 1/2 of the kids sandwich (they split one).

We had some super fun play time and some good brother & sister play time. these moments make my heart so happy to see them having such fun with each other. Yes they fight at times. Yes Teddy actually but Hannah this week. But they have fun playing cars, coloring, and always with our Lillebaby carrier!

JillFit August 2016 #20x20challenge Recap

August 2016 #20x20challenge JillFit Metabolic effect workouts

Jill threw down the #20x20challenge again this year for August! Complete 20 workouts in August that are ~20 mins long. I completed this challenge last year and you can read my recap here.  This year I was SO excited for this challenge. I was coming off a month  of 3 vacations (truly it was amazing!) and looked forward to the challenge and getting back on track!

The basic of the challenge is to complete 20 20 minute workouts(hence #20x20challenge) and be accountable with it- posting to Instagram.  It is a weight training challenge so at least 12 of the workouts had to be weights – not cardio. Workouts are limited to 30 mins tops! This is the metabolic effect way of training and in reality you can’t do these workouts longer than 30 mins!

Thankfully Jill provided workouts for this challenge.  She provided 8 weight training workouts and 6 cardio workouts to mix and match. I tried to loosely follow the schedule she provided. She pretty much had 2 full body workouts per week then 1 upper and 1 lower body workout. These workouts are not for the faint of heart! Here is one of my posts after one of the upper body workouts. I had to sit to rest up before I could even put my weights away!!

The lower body workouts were a serious challenge for me for this. I definitely had to step out of my comfort zone for them and get back to using the bar for squats and lunges. I also conquered my fear of box jumps and kettle bell swings this last month! The upper body workouts were a challenge too! I’ve been struggling with shoulders after a small injury last year so I’ve been hesitant to really push myself but I figured this was the perfect time. I can definitely see some improvement and I’m really excited to keep it up!

In this #20x20challenge I really had to push myself to Keep Going. Doing 4-5 weight lifting workouts per week is a struggle. If you aren’t careful you CAN get injured. I’m also a full time mom to two little kids. Sometimes I don’t get that much sleep. Sometimes I’m having to work around my entire family getting the stomach bug. My kids get up at or before 6 am and they are busy pretty much from the moment they wake up! Some days I can get to the gym and all I want to do is meander on the treadmill or sit on the bike and play on my phone – BUT I know and have found that by getting going and doing just those 20 minutes my whole attitude will change. It gives me the energy I need to get through the day. It gives me the motivation to keep going.

To keep going you have to BELIEVE in yourself.  I believed that I could complete this #20x20challenge.  Even when we were all sick with the stomach bug I sat down with the calendar and was counting out the days so I could complete it! I believed that I could do those shoulder workouts which made me nervous. I believed I could do the bar squats and box jumps. Guess what? I DID. I completed all of that. Yes I have my moments of not thinking I’m strong enough, but at the same time I can see the small changes here and there in my arms or my legs that the weight lifting is making a difference!

This #20x20challenge didn’t have a nutrition aspect to it. BUT I know enough about Metabolic effect and earlier this year doing Metabolic Prime – I know the premise and the guidelines for getting your HEC (hunger, energy & cravings) under control and eating well. So this month I challenged myself to step it up and sort out my nutrition. I had 1-2 protein shakes per day. I use either Orgain Organic protein, Amazing Grass Protein Superfood, or Arbonne protein. Then I sometimes would have a couple eggs and one slice of bread as a snack. In general I didn’t feel the need for other snacks even! Just a spoon of almond or peanut butter if I was starving. Then dinner was usually protein such as chicken, a little rice, beans, or potatoes. Typically a lot of protein, limited carbs, and some veggies. I’m not perfect -Yes I ate out and ate other stuff. But in general I felt a lot better and was still FULL.

Results:
I can see some definite improvement in my arms. I can lift heavier and I can squat a lot more. My legs are also getting some better definition.  I also noticed my midsection seemed slimmer.  The truth is the scale – it didn’t change! Its NOT all about the scale! I take measurements on the first of the month (except I forgot August). So between July 1 & September 1 here are the results:
Waist:- 1 inch
Thigh: -0.5 inch
arm: -0.25 inch

DID you read that?! yes I lost an INCH on my waist! No the scale didn’t move but things are changing! That is the most encouraging part! My clothes fit better and that matters!!

I owe Jill a HUGE shout out. She is amazing. There were a LOT of people participating in the #20x20challenge. Do you know that she spent HOURS on instagram commenting and liking and encouraging people?! She did. She read our struggles and wins and participated. Its one thing to have someone do this when you pay them-  but this – this was for free. So thank you Jill for being so awesome and for offering this again! I can’t wait until next year!

Mommy and Me Monday | The beginning Ep. 1!

This past week I read two articles about how one person blogs so she can have memories for her kids and another was someone who was very sick and wanted to know what sorts of things she should write in letters to her children. This really really struck me that I want to at least try to record a few things for my kids about what happened when they were little.

Last Sunday we spent a lot of time working in our yard. Our new rental had a pretty nasty yard with a ton of weeds and a garden box – full of mostly dead plants. We finally got everything dead pulled out. Then we bought some new potting soil and planted some wildflowers and sunflowers – a favorite of Hannah! We also used some egg crates to try and start some seeds for spinach and zucchini! I tend to have a black thumb but here’s hoping we can get something to grow!!

Then our week kinda flipped. I woke up Monday very sick with a stomach bug. Like I couldn’t get out of bed until almost noon! Thankfully hubby was able to stay home and watch the kids. They had a blast playing legos and matchbox cars! But then this bug went through the house. We had a good and easy Tuesday and Wednesday so I could recover. Wednesday evening Teddy decided was the perfect time to get sick. So long night there. We took it easy Thursday. Friday on the way home from the gym Hannah started feeling bad and poor girl got sick during her nap.

The stomach bug is no joke. My essentials this week were the following: Gatorade, bread, crackers, cheerios, Diaper sprayer & SprayPal , shout stain remover, and Norwex. My diaper sprayer and spraypal were awesome for cleaning off all the blankets, sheets, clothes, animals that became casualties of this bug! My shout was to try and keep everything clean!! and my Norwex was to first clean everything up ( they hold so much more and clean up better than any number of paper towels) and then since they are antibacterial I used them to clean my whole house!

This may not be the happiest Mommy  and Me Monday but hey we got through a week of the stomach bug so that’s a win in my book!

Sadly my dear hubby got the bug Saturday so we had a low key weekend with lots of downtime and cleaning. Now we are all feeling better so its time to ramp up for a new week! Do you have anything special planned this week?
