Hello!!

I made some awesome muffins today and just want to share!!

Here in California, if you blink your bananas will look like this:

We are talking a couple days up to a week if you forget, or get busy, they get covered up.. etc. Its happening WAY too often to me! So I’ve been searching for alternatives to Banana Bread. Not that it’s bad, just looking for something different!

In my Pinterest (follow me here) perusing I found this recipe from Crunchy Creamy Sweet. They looked pretty easy, I had all the ingredients AND it said ‘skinny’. By this I mean no oil and greek yogurt is used instead. I’m always game because I tend to eat more than my fair share!

I whipped these up this morning before it got too warm. A note about hot California – baking has to be restricted to early morning or late evening. 🙁 They were pretty simple and fast. The two substitutions I used were regular whole wheat flour vs white whole wheat and I only had semi-sweet chocolate chips.

I baked for the 5 minutes, then another 13 or so. My toothpick seemed clean, but I think they needed to bake a bit longer. They are not as fluffy as Anna’s and they ‘sank’ as they cooled in the pan for a bit. However that did not alter the taste! Here is the final product:

Even Hannah approved and chowed down on one after her nap! They have a great flavor and I’ll definitely be making some more!!
