Easy Instant Pot Red Curry

This summer on Prime Day I was one of the many who scored an Instant Pot.  What is an Instant Pot you ask? Pretty much the best cooking invention since the Kitchenaid Mixer. Its a pressure cooker – BUT it has many other features: slow cooker, rice cooker, yogurt maker, steamer.  Now you may say – well I have a crock pot and a rice cooker and yes so do I- but the Instant Pot is different.  It cooks faster and I’d say better so now we have come up with an Easy Instant Pot Red Curry that is a favorite dish!

One of the recipes we love to make at home is a yummy Red Curry with chicken. In the past I would have to cook the chicken, then use separate ingredients and cook everything in stages. However, I recently discovered Trader Joe’s Thai Red Curry Sauce. This sauce combined with the Instant Pot to cook everything made delicious curry we couldn’t get enough of!

Start off by cutting up about 1 pound of chicken into cubes. I used fresh chicken here – but you can use frozen. Just run it under cold water for a few minutes and use a sharp knife and chop it up.

Dump the chicken in the Instant pot and cover with the entire jar of curry sauce! Then I put a little bit of water in the Jar to get the rest of the sauce out (1/4c-1/2c water).

If you care for cashews you can throw some in there as well – I added 1/2 cup.

Set the Instant Pot for High pressure – manual cook time of 5 mins for fresh chicken & 7 minutes for frozen. If you have chopped up the chicken these cook times should be good. If you didn’t, it will need longer.

Once the cook time is finished, toss a towel over the valve and do a quick release of the pressure. Once it has released you can open it up and make sure the chicken is cooked. Then I turned the instant pot to saute and added about 1/2 can of whole Coconut Milk and stirred it around. I let it saute for a few minutes to mix and set the flavors even more. If your chicken isn’t cooked all the way – it should finish cooking during this time. If you want your curry even more soup-ey you can add the whole can of coconut milk.

We ate ours on top of brown rice and topped with a few more cashews!

Easy Instant Pot Red Curry with chicken

Ingredients
  • 1 pound uncooked chicken breasts
  • 1 Jar Trader Joe's Thai Red Curry Sauce
  • ½c Cashews
  • 1 can whole coconut Milk
Instructions
  1. Cut up the chicken into approximately 1" cubes.
  2. Add chicken to the Instant Pot
  3. Pour jar of curry sauce on top. Use a little water (1/4-1/2c) to rinse out Jar & add to chicken.
  4. Top with cashews
  5. Set Instant pot to manual high pressure for 5 minutes for fresh chicken (7 min frozen)
  6. Perform quick release when finished.
  7. Add in ½ or whole can of coconut milk and turn to Saute.
  8. Saute for 3-5 minutes.
  9. Best served with brown rice and topped with more cashews.

This is a recipe that is going in our regular rotation!

Protein Superfood Pudding!

Ingredients
  • ¾-1 c Almond Milk (or other milk)
  • 1 serving Amazing Grass Protein Superfood
  • 1 frozen Banana
  • up to 1 TBSP Cocoa Powder (optional)
Instructions
  1. Add all ingredients in the blender & blend until smooth.
  2. Chill for 30 mins or until time to serve
  3. Top with chocolate chips or sprinkles for a fun treat!

I love having this in the evenings. As a nursing mom, I always get hungry about 10 pm! I really struggle with finding something yummy to eat! Sometimes I have apple & almond butter or just a little protein and milk, but this is totally going to be my new go-to evening snack! Its so filling as well! Best of all – my kids both LOVED this! What is a better snack than something which already has fruits & veggies in it PLUS chocolate? I can’t think of much else!

Protein Mocha Frappe!

Summertime usually calls for cold coffee not hot! I love coffee after a solid workout but I also need to get my protein in for recovery! Therefore I thought I’d combine them!

Protein Mocha Frappe

This is super easy and super yummy! I altered a recipe I got from Kate.

Ingredients:

  • 4 oz Coconut milk (or milk of your choice)
  • 2 Tbsp Cocoa Powder (I prefer the dark!)
  • 1/3 c Cold brew coffee (Or 1/2c of regular coffee chilled)
  • 1 scoop protein powder (I use Plant Fusion)
  • Ice to desired thickness

Dump all ingredients in blender and mix it up! The more ice you have the thicker it will be!

A few notes – Cold Brew. We use the Toddy Cold Brew Coffee Maker  to make cold brew. It is very smooth and addicting!

You can use any other protein powders you wish!

Enjoy after you next sweaty workout!!

Homemade Corn Tortillas

We eat a lot of Mexican food. It is easy to cook and fast and yummy! Tacos and enchiladas are our staples. Last week I made my fancy chicken tacos and bought our favorite tortillas at the store. Our favorites are La Tortilla Factory Handmade Style corn tortillas. They are super yummy but a bit pricey. After the first night (oh yeah we eat them for a week it makes so much!!), hubby suggested we try to make our own. So I started looking on Pinterest.. I found this great tutorial from Naturally Ella! It looked easy!

I hit the store to buy some Maseca, which is corn flour. I don’t have a tortilla press but the comments say a pie plate or rolling pin work fine!

I followed the recipe on the back of the bag:

2 c Masa

1 1/3 c water

1/4 tsp salt

Dissolve the salt into water and then add to the flour and mix.

Then you use golf-ball or ping-pong ball size balls of dough to made the tortillas. Flatten them out then cook in a medium high heat pan 60s each side.

Keep warm in a damp towel.

Well I don’t have a press. I might get one if this becomes a regular thing.. Something like this: Cast Iron Tortilla Press.  Instead I used a pie plate to press them then a rolling pin to thin them out a bit.

This worked great to get them even and round. Just not super thin.

First time I cooked them one at a time in my skillet…

Rightttt… It took For.ev.ER. I think because they are thicker it took a bit longer to cook. The second time I used my electric skillet. Use one or a large griddle. trust me.

However they turned out fabulously!

Blueberry Protein Muffins

Pinterest can be fun! We all know we spend WAYYY too much time on there. However I have found a few good things!

For example I found these:

 

They looked pretty good, but so do most picture people take right?! Anyways I was bored on Sunday and wanted to bake. Not just cookies or something terrible, but something a little different! (Don’t get me wrong.. I made cookies too!)

So I made these.  Here is the recipe from Domesticated Academic:

  • 2 c. AP flour
  • 1 c. Oatmeal (I used regular not quick oats. – either should work)
  • 2/3 c. sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 12 oz honey nonfat greek yogurt (2 of the little cups)
  • 2 large eggs, lightly beaten
  • 4 Tbsp unsalted butter, melted & cooled
  • 1 tsp Vanilla extract
  • 1 c blueberries

Directions:

1. Heat oven to 350F

2. Coat muffin tins with liners or spray

3. Combine dry ingredients in a bowl and mix together.

4. Combine wet ingredients in a bowl and mix together.

5. Add wet to dry ingredients. Gently fold in blueberries

6. Spoon into muffin tray and bake 20-25 mins.

Here is everything mixed up:

Then scooped into the muffin tins. I filled mine pretty full and STILL got 16 muffins. Pretty good deal!

Then twiddle your thumbs and play on facebook and twitter for about 21 minutes…

And they are done! I think they look pretty amazing!!

Let them cool in the pan for about 10 minutes so they are easier to get out. I didn’t user liners.

You can eat them immediately, but I also have reheated in the micro for a bit and they are yummy! The finished muffins:

I have to say these are really good. I haven’t done the full nutrition on them and they aren’t likely super great, but they definitely have way more protein than anything out of a box mix! I am really enjoying eating one with my breakfast every day. It has helped me stay full longer for sure!
