Banana Chocolate Chip Muffins

Hello!!

I made some awesome muffins today and just want to share!!

Here in California, if you blink your bananas will look like this:

We are talking a couple days up to a week if you forget, or get busy, they get covered up.. etc. Its happening WAY too often to me! So I’ve been searching for alternatives to Banana Bread. Not that it’s bad, just looking for something different!

In my Pinterest (follow me here) perusing I found this recipe from Crunchy Creamy Sweet. They looked pretty easy, I had all the ingredients AND it said ‘skinny’. By this I mean no oil and greek yogurt is used instead. I’m always game because I tend to eat more than my fair share!

I whipped these up this morning before it got too warm. A note about hot California – baking has to be restricted to early morning or late evening. 🙁 They were pretty simple and fast. The two substitutions I used were regular whole wheat flour vs white whole wheat and I only had semi-sweet chocolate chips.

I baked for the 5 minutes, then another 13 or so. My toothpick seemed clean, but I think they needed to bake a bit longer. They are not as fluffy as Anna’s and they ‘sank’ as they cooled in the pan for a bit. However that did not alter the taste! Here is the final product:

Even Hannah approved and chowed down on one after her nap! They have a great flavor and I’ll definitely be making some more!!

Blueberry Protein Muffins

Pinterest can be fun! We all know we spend WAYYY too much time on there. However I have found a few good things!

For example I found these:

 

They looked pretty good, but so do most picture people take right?! Anyways I was bored on Sunday and wanted to bake. Not just cookies or something terrible, but something a little different! (Don’t get me wrong.. I made cookies too!)

So I made these.  Here is the recipe from Domesticated Academic:

  • 2 c. AP flour
  • 1 c. Oatmeal (I used regular not quick oats. – either should work)
  • 2/3 c. sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 12 oz honey nonfat greek yogurt (2 of the little cups)
  • 2 large eggs, lightly beaten
  • 4 Tbsp unsalted butter, melted & cooled
  • 1 tsp Vanilla extract
  • 1 c blueberries

Directions:

1. Heat oven to 350F

2. Coat muffin tins with liners or spray

3. Combine dry ingredients in a bowl and mix together.

4. Combine wet ingredients in a bowl and mix together.

5. Add wet to dry ingredients. Gently fold in blueberries

6. Spoon into muffin tray and bake 20-25 mins.

Then scooped into the muffin tins. I filled mine pretty full and STILL got 16 muffins. Pretty good deal!

Then twiddle your thumbs and play on facebook and twitter for about 21 minutes…

And they are done! I think they look pretty amazing!!

Let them cool in the pan for about 10 minutes so they are easier to get out. I didn’t user liners.

You can eat them immediately, but I also have reheated in the micro for a bit and they are yummy! The finished muffins:

I have to say these are really good. I haven’t done the full nutrition on them and they aren’t likely super great, but they definitely have way more protein than anything out of a box mix! I am really enjoying eating one with my breakfast every day. It has helped me stay full longer for sure!

Give them a try if you have the ingredients! I’ll be making more for sure as blueberries come into season!!

I have pinned a lot of stuff. I have not tried much of it admittedly. Sad I know. However this weekend I was determined.

Chocolate Chip Muffins from My Baking Addiction!

(If you don’t read this blog you are missing some good food!)

So I followed the recipe except that it calls for whole milk and I used skim milk. I have had experiences before where this changes the viscosity of the batter. Luckily It did not seem to change this.

The other really interesting thing here is that these muffins call for brown sugar and white sugar. It makes a huge difference in taste!

I followed the directions and they are amazing!!

Mine turned out pretty similar to the picture! exciting!!

I am dying how yummy they are!! I didn’t give any of  them away they are that good!!
